1/2 bunch scallions
2 tbsp extra virgin olive oil
a pinch of salt, a dash of pepper, and a sprig of fresh oregano
1/4 cup water
Chop all veggies into bite sized pieces.
Saute in olive oil on medium heat for 15 minutes. Pour water over veggies to steam and continue to saute for another 5 minutes.
You could also add chopped broccoli stems, radishes, cabbage, kohlrabi, or any other of your non-favorite veggies. The end dish is very desirable.
