Green Tomato Fritters

2 green tomatoes, sliced into small pieces
1 cup of minced veggies of your choice
2 cups cornmeal
3 eggs or egg substitute (such as flaxmeal/water)
a pinch each of sea salt, freshly cracked black pepper, and smoked paprika
Mix all ingredients and fry in a hot skillet over medium heat for 2-3 minutes on each side in 1/4- 1/2 cup olive oil or coconut oil
Serve with a cucumber/ smoked paprika mayo dipping sauce (I prefer veganaise)
