Greens With Garlic Scapes, Caramelized Onions and Electric Beet Goat Cheese
All the greens (turnip tops, chard, beet greens, any other greens you want to use)
1 tbsp salt
2 sprigs of oregano
2 garlic scapes, sliced thin
8 oz goat cheese
1 oz beet juice (or water you used to boil beets)
Caramelize onions and then remove from pan.
Chop all the greens.
In the same pan, saute greens and garlic scapes in a splash of extra virgin olive oil for 10-15 minutes, stirring regularly. Add salt and oregano.
Combine goat cheese and beet juice.
Serve the greens topped with caramelized onions and beet goat cheese as a side dish with roasted beets and turnips.
