Veggie Patties

2 beets, shredded
3 carrots, shredded
2 cups greens, chopped (kale, chard, cabbage and pac choi)
2 cloves garlic, minced
2 scallion spears, sliced thin
2 cup sunflower seeds
1 cup walnuts
3 tbsp ground flax
1 cup bread crumbs (I prefer gluten free panko crumbs)
1 tsp salt
1 tsp fresh cracked pepper
1 pinch of herbs of your choice
a small bowl of extra virgin olive oil (to brush patties with pastry brush)
Shred and chop all vegetables and set aside (For a quick meal, shred in the food processor)
In a food processor, blend sunflower seeds and walnuts until they resemble fine powder
Add 1 cup of chopped greens and blend until smooth
In a large bowl, combine the walnut, sunflower seeds and greens mixture with the remaining ingredients. Mix well.
Roll into 12 equal balls and place on a cookie sheet lined with parchment paper.
Flatten each one to create patties.
Brush with extra virgin olive oil.
Bake for 15-20 minutes at 375 degrees.
