Veggie Spring Rolls
A great way to use your greens this week is to add them to veggie spring rolls. I typically use rice paper to make spring rolls but I didn't have any last time I had the craving so I used tortillas instead. Simply spread spicy hummus or tahini on tortillas; layer fresh veggies of your choice such as shredded carrots, tofu, mint, cilantro, rice noodles and sprouts in one end of the tortilla. Roll tightly and slice. Serve with a peanut cilantro dipping sauce.
